Guys…it’s hot!  Like in the 80s, which is hot for San Diego, because not many places have AC. You will find most of us cooling off at the beach, sipping on frosty beverages, while snacking on chilled deli sandwiches. Well, not this San Diegan!  I have been doing a decent amount of traveling lately, and whenever I return home I have been craving giant bowls of vegetables. So instead of twinkling my toes in the sand at the beach, you… Read more »

Fall, oh how I love thee…let me count the ways. Fall is one of my favorite times of the year.  I love the crunchy leaves under my feet, leaf peeping, boots over jeans, cozy sweaters, apple picking and pumpkin carving. I also love having the excuse to eat soup everyday. I love a good pot of soup, and there is nothing more comforting than filling your favorite pot with a ton of awesome ingredients, and making your house smell magical… Read more »

I am currently crushing hard on anything that I can put into a bowl. I just love piling a ton of healthy ingredients into a bowl to easily create a simple, quick and healthy meal. You can even mix and match the flavors, which is what I love about bowls so much. Today I put this spaghetti squash mixture over greens and tomorrow I might toss it into some lettuce wraps. The possibilities are endless! This recipe originally started out… Read more »

Derika and I went to Ireland in 2008 and had the time of our lives. We started in Dublin and road tripped the whole southern half of the country, stopping wherever our little hearts desired or whenever we got thirsty. Let’s just say there was a lot of Jameson and Guinness consumed… Being a vegetarian, I was worried that I would have a hard tome finding things to eat in Ireland. As I suspected, Ireland was not super duper vegetarian friendly,… Read more »

Derika and I spent our ten year anniversary in Santorini Greece in July of 2014. Both of us have always wanted to go to Santorini, so we decided that our ten year anniversary was the perfect time to make the trip. We had such an amazing time; you can read about our adventures here and you can check out some of our favorite places to eat here. Santorini is famous, food-wise, for a few things: yellow split peas, tomatoes, and wine… Read more »

At the end of last year, Derika and I spent two weeks traveling through Thailand. During that time we spent a few days in Bangkok, Chiang Mai, and Krabi, taking cooking classes in each city. The food scene in Thailand really blew my mind and I was glad that we took the time to take a cooking class in each location. Out of all of the things that we learned to make, my favorite dish was a Chiang Mai Curry… Read more »

I was walking home from yoga the other day and I noticed a huge crate in front of the grocery store filled with squash for only $.68 a pound! I think that this is currently the most affordable thing in NYC! At that point I also realized that I have never cooked with butternut squash, so I scooped one up and decided to make some soup with it. I roasted it similarly to the way that I would roast a… Read more »

Happy Halloween Everyone!!! Halloween is probably one of my most favorite times of year. I would wear a costume everyday if I could, or at least some type of headband with a unicorn horn or kitty ears on it. I am always looking for an excuse to dress up in costume and eat gummi bears, and on this holiday it is more than acceptable! I also love the crispness that you start to feel in the air, the boots and fluffy sweaters,… Read more »

It is spaghetti squash season and I couldn’t be more excited! Spaghetti Squash is so versatile and goes great in Italian and Thai dishes. I was in the mood for Italian so I decided to whip up my Baked Spaghetti Squash dish. I tried to pick out the smallest spaghetti squash that I could find, since there wasn’t a price on any of them and I was only cooking for two. I got up to the register and even though the… Read more »

Derika managed to catch the plague at work last week and with all the travel and long hours, this cold has been holding on for dear life. I have been keeping my distance the best I can in our 582 square foot apartment.  I have also been downing a ton of fire cider and drinking tons of water in hopes that I don’t get the plague as well.  So far it has been working like a dream! Yay, for Fire Cider and… Read more »
