Dear sweet sweet mac n’ cheese how I love you so.  Macaroni and cheese is one of my favorite foods and guilty pleasures. I have loved it since my mom use to make it for me with cheese whiz and celery way back in the day. Over the years my mac n’ cheese recipe has been constantly evolving, and it has become a bit more gourmet…but it still has the celery in it in honor of my mom. I… Read more »

To say that I have a small addiction to chips and salsa is an understatement.  I could probably eat chips and salsa every day if I had the chance.  Heck, I made Derika take me out for Mexican food on both Friday and Saturday last weekend…I seriously have a problem. Last week Tuesday, my friend Erin reached out to me to see if I might like to grab a tasty beverage or dinner.  It occurred to me that it… Read more »

So the heat continues and I am still not complaining after the winter that we had, I am just getting more creative with how to not use the oven on the sweatiest of days. We have also officially opened up the Double D Bistro and we are now taking reservations. 🙂     We are lucky that the windows of our apartment overlook a quiet street and a courtyard. We open the windows and slide our bar stools up… Read more »

It has been heating up in NYC, which has been making our apartment feel like my own personal sauna.  We do have air conditioners, but I am fighting it, because I feel like I really need to embrace the summer a bit since the winter was so brutal. I will admit though that we have been using the one in our bedroom at night to help us sleep…it has also been doing wonders on drowning out the city noise. As a result of… Read more »

Derika managed to catch the plague at work last week and with all the travel and long hours, this cold has been holding on for dear life. I have been keeping my distance the best I can in our 582 square foot apartment.  I have also been downing a ton of fire cider and drinking tons of water in hopes that I don’t get the plague as well.  So far it has been working like a dream! Yay, for Fire Cider and… Read more »

It is Taco Tuesday again, how are you going to celebrate? Derika is traveling so I am treating myself to margarita happy hour with a friend. Last week I made a killer enchilada sauce, no more canned enchilada sauce for this girl. With that sauce I made this epic veggie enchilada casserole.  This dish would be great for a Taco Tuesday or a Cinco de Mayo party. I can’t believe that Cinco de Mayo is right around the corner! Back in the day my favorite quick meal to make at home was a garbage quesadilla.  What is a garbage quesadilla, you ask? Basically veggies and a veggie friendly protein stuffed into a tortilla with cheese (everything is better with cheese), fold the stuffed tortilla in half and brown in a pan on both sides. I am trying to not eat as many gluten products these days, so I have been making the heck out of Veggie Bowl-Ritos. What is… Read more »

Things are changing on my end. Derika and I are in the process of getting ready to relocate to NYC for her job at the end of this month!  My days have been spent enjoying the beach, cooking and purging all of the things that we will not be able to take with us on this move. All of this purging has gotten me to thinking about all of the great things about San Diego that I will miss.  Favorite… Read more »

I love french onion soup, but finding a vegetarian one or a good vegetarian one for that matter is next to impossible.  So I decided that it was about time to share my recipe.  As you can see, I am still on my soup kick, but I have also been craving the heck out of cheese… so I decided to whip up some vegetarian french onion soup.   It was way too hot in my house to make soup, but… Read more »
