I am sitting on my balcony right now listening to the ocean and the sound of boxes being taped, as the last of our belongings get loaded into the moving truck that will be headed to NYC.  My neighbor bunny is not pleased with the situation and is currently giving me the stink eye. Tomorrow we are off on a week-long road trip that will eventually lead us to NYC. Along the way we plan on stopping at the Grand… Read more »

Back in the day my favorite quick meal to make at home was a garbage quesadilla.  What is a garbage quesadilla, you ask? Basically veggies and a veggie friendly protein stuffed into a tortilla with cheese (everything is better with cheese), fold the stuffed tortilla in half and brown in a pan on both sides. I am trying to not eat as many gluten products these days, so I have been making the heck out of Veggie Bowl-Ritos. What is… Read more »

Things are changing on my end. Derika and I are in the process of getting ready to relocate to NYC for her job at the end of this month!  My days have been spent enjoying the beach, cooking and purging all of the things that we will not be able to take with us on this move. All of this purging has gotten me to thinking about all of the great things about San Diego that I will miss.  Favorite… Read more »

“Everything is better with bacon!” This is all you hear nowadays and Mr. Bacon has been used and possibly abused in almost every way imaginable…poor boy.  On the other hand, I have to admit I am a vegetarian, but even I can appreciate the creative things that bacon has inspired. I mean, come on…I just saw a bacon weave taco on Facebook for pete’s sake! I use to eat the heck out of bacon when I was little. Growing up,… Read more »

Growing up I hated brussel sprouts!  My Mom always made the frozen ones from the freezer section, that she boiled and they tasted like green mush. The only way that she could get me to eat them was by telling me that they were baby cabbages. For some odd reason I loved the idea of cabbages having babies for me to eat, even if I had to gag them down. Anyway, I did not discover that I actually love fresh… Read more »

As you can see, I am still on the Indian Crock Pot train.  I can’t help it, I have a bit of a problem.  I also love that I can load my crock pot with bits of  happiness before I head off to work and when I come home my house smells dee-licious… AND I have an amazing warm dinner waiting for me!  I mean…Come On! It is the closest that I can get to having my own personal… Read more »

I have been making the heck out of almond milk lately.  It is just so darn easy to make and a perfect complement to my smoothies in the morning.  Over the course of a couple of weeks, I end up with a lot of almond pulp from all of the almond milk that I make. I really wanted to do a post on what to do with all of your almond pulp, so that you don’t throw your almond pulp… Read more »

I love the simplicity of a really good caesar salad. What I don’t like is the fact that most caesar salad dressings have raw eggs and anchovies in them. I recently discovered that sunflower seeds make a great base for creamy dips and salad dressings and that is the inspiration behind this dressing. Ingredients 1/2 C Soaked sunflower seeds 2 T Tahini 3 T Lemon juice 1 T Olive oil 1 Clove garlic 1 Tsp Miso 1/2 Tsp Sea salt… Read more »

I have what some people call a problem with chips…if they are in front of me I have to eat them.  I don’t discriminate…tortilla chips, kettle chips, hot chips…I love them all! This ginormous obsession forced me to find a healthy alternative for this not so healthy snack, and that is how I stumbled upon kale chips.  I like kale and I love chips, so how can you really go wrong…well unless they turn out soggy, cuz I hate soggy… Read more »

I recently discovered that I like almond milk. Well, actually I LOOOOVE almond milk!  It has a great taste that goes great in just about anything and it is dairy free, so your tummy will also thank you for it.  Once you’ve had it fresh, the rich taste will keep you coming back for more! And guess what? It’s super easy to make. Why drive to the store and buy almond milk when you can make it in minutes, plus it is… Read more »
