Over Memorial weekend Derika surprised me with a last-minute trip to Cape Cod. I could not have been more excited, because when we looked at our summer calendar earlier in the month, we realized that we only had a handful of weekends open this summer to explore the east coast. We lived on the west coast for 7 years, and we probably drove Highway 1 at least four or five times.  I love a good road trip…

  • You get to stop at every random tourist attraction that tickles your fancy.
  • You get to make some killer road trip mixes that you can sing along too at the top of your lungs.
  • You get to load your car with the most amazing road trip snacks.

We left super early on the Friday of Memorial Day weekend, and we were in our car and on the road, with a NYC bagel and cream cheese in hand by 7am. We got lucky and didn’t hit any traffic and made it to the Cape by lunchtime. Derika rented us a place through Airbnb and we totally scored. (If you have not had a chance to check out Airbnb, make sure you do, because it will be one of the best travel decisions you have made). The place that we stayed in was centrally located on the Cape, so you could drive one direction and be in downtown Provincetown within an hour or drive an hour in the other direction and be in Woods Hole to hop the ferry to Martha’s Vineyard. The place was adorable and super clean, the location made it great for day trips, the hosts kept the small fridge stocked with amazing breakfast goodies and the icing on the cake was that they had chickens!

Seriously, look at these lovely ladies! We were out and about during the day, so unfortunately we did not get to spend as much time with these girls as I would have liked. However, we did get an opportunity to get out and see what Cape Cod has to offer. I feel like we only scratched the surface and I would go back in a heartbeat to continue the adventure.

Fun Thing #1

Go to Providence Town aka P-Town and have a mojito or three!

So we ended up going to P-town on both Friday afternoon and all day on Saturday. I have to be honest; we basically did some shopping (aka unintentional sunglass shopping…see photo below) and enjoyed numerous beverages on random patios throughout town. How can you blame us really, the weather was so gorgeous and there were many many many mojitos to try! My favorite place by far was the Patio American Grill, where they had a great sunshiny patio and a huge list of mojitos that we needed to sample our way through. After about three of their mojitos, you will be making ALL OF THE FRIENDS (see photo below)!

In addition to sipping ALL of the mojitos on the patio, we got sucked into the many sunglass stores on the cape. I don’t know how it happened, but we ended up leaving Cape Cod with 6 new pair of sunglasses by the end of the weekend. If you are wondering, it is very important to make sure that you sunglasses match your outfit… (I love how you can see my reflection in the lenses of these glasses). 😉

One thing that I forgot to mention is that it was Women’s Weekend the weekend that we were in P-town. We did not plan this, but I can’t say that I was disappointed. There were definitely some great events to attend and some epic people watching.

Take a Ferry to Martha’s Vineyard!

We got up on Sunday morning and headed to the Wood Hole Ferry terminal where we caught a 30-minute Ferry to Martha’s Vineyard. We arrived to a town called Vineyard Haven, but the food choices were lacking and the town was dry, so we jumped on a bus and headed to Oak Bluffs. Do this…just trust me. I was starting to get fangry (aka F-ing Hungry) so Derika ushered me to the closest restaurant with a patio called Nancy’s Restaurant. I had an amazing Greek wrap and Derika got the crab cakes, we recommend both. In regards to tasty beverages, we started out with their Mai Tai…basically a vacation in a glass.

What is a Dirty Banana you ask? Nancy’s is apparently famous for it…this drink is basically a mudslide made with frozen bananas, and it is epic and tastes like dessert. If sweet frosty beverages are your thing, then run to Nancy’s and order this drink! Also the view at this place is stellar, so you might need to get 2 dirty bananas. 😉

Go to OFFSHORE Ale Company in Oak Bluffs.

This place brews their own beer and has a couple of other great local brews on tap. Grab a couple of local brews and a basket of peanuts and enjoy their small patio.

Head to the Black Dog Outlet store in Oak Bluffs and get matching sweatshirts!

If you look closely when you are touring the island, you will notice images of a mysterious black dog that appears all over. You can read about the Black Dog story here, but to dress like a local head to this shop before you leave the island and stock up on your Black Dog paraphanalia.

We were unfortunately too full from our late lunch to catch another meal on Martha’s Vineyard, but that didn’t stop us from grabbing a slice at Porto Pizza in Vineyard Haven for the ferry line. With pizza in hand we caught the last ferry out of Martha’s Vineyard and we were back to our rental in time to chill out with some Bananagrams, before bed. After breakfast the next morning we headed home, and made it back to the city in about 5 hours…not too bad for a holiday weekend!

We will definitely be back to the Cape to do some more exploring in the future, but for now I hope you enjoy some of my suggestions from above.

Veggie Chopped Salad
It has been heating up in NYC, which has been making our apartment feel like my own personal sauna.  We do have air conditioners, but I am fighting it, because I feel like I really need to embrace the summer a bit since the winter was so brutal. I will admit though that we have been using the one in our bedroom at night to help us sleep…it has also been doing wonders on drowning out the city noise. As a result of this sweaty weather, it has been making me crave all things salad. I don’t know about you, but if I am going to eat only a salad for dinner, I want that salad to be jam-packed with a ton of magical goodies. It probably takes the healthy aspect out of eating a salad, but hey, I am eating a salad. 🙂

This recipe is inspired by all of the amazing chopped salads that you see in restaurants. I always want to order them, but being a vegetarian kind of takes the excitement out of restaurant style chopped salads. After I minus all the meat and the olives (yes, I am a crazy vegetarian that can’t seem to get herself to like olives), I am left with a sad-looking salad that has a couple sprinkles of cheese and hard boiled egg on it that I paid $12 for…FAIL!

So for this salad, I am making up for all of the chopped salads that I could never order and I loaded it with every veggie that I had hiding in my fridge. As an added bonus, I added some pepper jack cheese and some field roast deli slices to add a little extra sass. I also whipped up my own dressing, and to my surprise this salad actually ended up tasting like and amazing Italian sub!

I grew up in Michigan eating Tubby’s Italian Sub Sandwiches, gosh I miss them! The secret to the Tubby’s Subs is definitely in the dressing, which is basically vinegar, oil, salt, pepper and oregano. I have to say that this dressing comes close, but it also packs a lovely garlic punch. The recipe below will feed four people and you will have enough leftovers the next day (which you will be happy about after you try this recipe).

Veggies for Salad

 

Ingredients

Italian Sub Dressing

  • 1.5 TBS Dried Oregano
  • Juice of 1 Lemon
  • 1/4 C Red Wine Vinegar
  • 1/4 C Extra Virgin Olive Oil
  • 1.5 Tsp. Salt
  • 6 cloves garlic
  • Freshly Ground Black Pepper, to taste

Salad Ingredients

  • 1 Can Chickpeas, rinsed and drained
  • 1 C Cucumber, chopped
  • 1 Small Sweet Onion, peeled and sliced into paper-thin rings
  • 1 C Broccoli, chopped
  • 1 C Red Pepper, chopped
  • Pepper Jack Cheese or your cheese of choice, as much as your little heart desires.
  • 1 Pkg. Field Roast Lentil Sage Deli Slices or Real Salami, sliced into strips
  • 10 Small Pickled Pepperoncini, sliced into rings (save juice and seeds)
  • 10 Cherry Tomatoes, halved
  • 1 C Curly Kale, ribs removed and cut into thin strips
  • 3 C Romaine Lettuce, cut into thin strips
  • 1 Head Radicchio, halved, cored and cut into thin strips
  • 1/2 C Quinoa, cooked
  • Dried oregano, for garnish
  • 1 Hard Boiled Egg, per person, sliced (optional)
  • 1/4 Avocado, per person, sliced (optional)
*Note – Feel free to add whatever veggies you want, I used what I had in my fridge, but this salad would be great with any combination of veggies. Also to make this recipe paleo, just drop the cheese.*

Dressing Instructions: 

  1. Roughly chop the garlic on a cutting board and then add the oregano, salt and a 1/2-teaspoon ground pepper on top of the garlic on the cutting board.
  2. Chop the mixture together until the garlic is super fine.
  3. Transfer garlic mixture to a large salad bowl, and add the lemon juice and vinegar.
  4. Mix with a fork or whisk allowing the salt to dissolve, then add the oil and whisk with a fork until well combined.
  5. The dressing should be thick. You can leave it like this, but if you like a smoother dressing run it quickly through your food processor or magic bullet.
  6. Adjust the oregano, and vinegar to taste if needed.
  7. Transfer the dressing to a small jar and set in the fridge.

 

Salad Instructions: 

  1. In a large salad bowl add the chickpeas, onion, cucumber, broccoli, red pepper, cheese (either cubed or shredded), field roast or salami slices, pepperoncini (including seeds and juice).
  2. Add half of the dressing to the bowl of ingredients above and gently toss.
  3. Gently add the romaine, kale, radicchio and quinoa to the salad bowl, along with a couple of generous pinches of oregano, and toss to combine with the dressing.
  4. Adjust seasonings to taste, adding any reserved dressing if needed. Serve immediately.
  5. Top each individual salad with the tomatoes, the optional avocado and hard-boiled egg slices and eat the heck out of it.

A couple of weeks ago I headed to Chicago to attend The Blogcademy, a weekend long blogging workshop. A year ago, my friend Lilly (Blogger at Rake & Make) told me about a great blogging event that she was attending in Portland, and she suggested that I look into one in my hood. Of course life got in the way at the time, so one of the first things that I did when I moved to NYC, was check to see when The Blogcademy was coming to town. To my delight it was headed to my city in September, but as the months passed I realized that I was way too pumped to wait to attend the NYC event. So I jumped online and searched for the soonest workshop closest to me, which just so happened to be in Chicago! I haven’t been to Chicago in almost 10 years, so I decided that it was definitely time to pay Chicago another visit and booked my trip.

If you are not familiar with The Blogcademy, it is a weekend long blogging workshop that is hosted by Shauna, Kat and Gala…three inspiring ladies and rock star bloggers.

I left the weekend super inspired, with a notebook full of notes, and a little overwhelmed from all of the new stuff that I learned. I loved all of the info that I received, but it was so hard not to go home and totally scrap my whole blog and start over from scratch. While I was at the event I had a great conversation with Gala, and she talked down me off my ledge. These ladies helped me to realize that everyone has to start somewhere, and I am bound to make mistakes along the way, which I guess is part of the fun. Instead of changing everything on my blog at once, I plan on making smaller changes over time. So stay tuned for some sparkly new updates on my blog over the next few months, because I now have ALL OF THE IDEAS!

In addition to hanging out with amazing bloggers over the weekend. Julia the Mystical Traveling Unicorn and I got spend some time with my fellow Rat City Rollergirl pal, Sara Problem…aka Megan and her kitty Winston. I don’t have any photos of Megan and I (FAIL), because I was too busy taking photos of her adorable kitty Winston.

 

Megan was awesome and let me crash at her place over the weekend. It worked out perfectly, because we got to catch up and the location of her apartment could not have been anymore perfect for testing out Chicago’s public transportation system. I didn’t have a ton of time to check out the city, but while I was there I did manage to get out and zip around a bit. Here are some of my weekend highlights and Chicago travel suggestions.

Grab a beer at Revolution Brewery, located near Logan Square (where I was staying). This brewery has a great atmosphere and a great beer selection. Ask for a Malort shot in addition to your beer…a wormwood-based liqueur shot that tastes a bit like death with a hint of grapefruit. I have no idea why, but the locals love it…so be adventurous and drink like a local!

Go see Cloud Gate aka The Bean…A huge reflective sculpture in downtown Chicago, that is in the shape of a giant bean and is a great place to take photos. I got to the bean just before the sunset, but I was still able to grab this fuzzy selfie.

Go check out the Windy City Rollers. My friend Sara Problem currently coaches for them, so I was lucky enough to see a game while I was in town. It was nice to relive my rollergirl days with her lovely team and I scored a great t-shirt!

 

Have an amazing vegetarian meal at the Chicago Diner…even meat eaters will love this place! I so wish I could eat here everyday! Everything on the menu is either vegan or vegetarian, which is my dream come true. They also have a great bar, friendly bartenders (which is key when you are eating by yourself) and a killer beer and liquor selection.

On your way to the airport check out the Reno Cafe in Logan Square, and grab a wood-fired bagel before you get on your flight. Their bagels are a lot thinner than the ones you get in NYC, but it was perfect for my breakfast sandwich.

Needless to say I packed a bunch into a very short weekend and I would do it again in a heartbeat. If you have the opportunity to attend The Blogcademy in a city near you, go for it and if you are ever in the Chicago area I hope you have a chance to check out some of my suggestions! Travel Snacks
Travel snacks are the most important thing you need to think about when you are planning a successful road trip.  Oh sure, I guess you should plan your route ahead of time. That way you would know where you are going, but even the best road warriors get lost from time to time.

“What saves those skillful road warriors when they are lost??”…  Epic travel snacks!

“What saves you from having to buy the sketchy boiled peanuts at the gas station when you are starving??”… Epic travel snacks!

“What helps you make friends with the gaggle of goats that are hanging out along the side of the road??”… Epic travel snacks!

“What keeps you from chewing your hand off when you are stuck in holiday traffic and there are no rest stops in sight??”…Epic travel snacks!

You get the point. Everything is much more manageable on the road when you have all of the snacks you need, and you aren’t dealing with hangry (aka…Hungry Angry) passengers.

Derika and I are heading out on our second east coast road trip since we have moved to NYC.  We are heading to Cape Cod for Memorial Day weekend, and I know for a fact that we are going to have ALL OF THE FUN, but the traffic is going to suck butt. I find that the key to not letting the traffic get to you is by winning your road snacking.

Tip Numero Uno: This is not the time to get on your healthy high horse, because you will get bucked off before your horse even begins to prance.  Everybody needs some cheat snacks to add balance, so the key is to diversify.  My formula for ultimate snacking happiness is for every two healthy snacks, I throw in one cheat snack.

For Example:

Veggie Sticks with Sassy Sauce + Trail Mix = One Block of Cheddar with Crackers

Carrots, Celery and Cheese

Dried Mangos + Grapes = Veggie Chips

Tip Numero Dos: I find that if you have the right balance of healthy snacks and cheat snacks, then you won’t be as tempted to buy every Limited Edition Doritos flavor that you see while you are on the road.  I am not saying that you shouldn’t buy these rare Doritos (that are calling out to you, while you are in the gas station looking for a restroom), who knows when you will find them again. I am saying that by planning your snacks ahead, hopefully you will have enough magical snacks in the car, that you might only buy one bag of Limited Edition Doritos…rather than every new flavor you see.  It is all about finding a balance that helps you feel good and not guilty while you are on the road.

Tip Numero Tres: Pack your own tasty beverages.  Nothing makes a road trip more rewarding than to be able to celebrate your safe arrival with a tasty beverage.  You can make them ahead and keep them in a thermos so that you can have a cocktail with your picnic. Or you can just bring the supplies with you so that you don’t have to go hunting for a store as soon as you arrive.  Who knows…. you might arrive to your destination late, and then what are you going to do!? Trust me you will thank me for this tip.  PS. Don’t forget the bottle opener! 😉

As a side note, feel free to use these snacking tips for your next flight.  Nothing is worse than being stuck in an airport that only has week old pizza slices as your only snacking choice.

In a little over a week I will be headed to Blogcademy in Chicago and I cannot wait!! Blogcademy is a two-day workshop that is designed to give you the tools that you need to help kick your blog up a notch or 15. It is hosted by 3 amazing ladies that are currently rocking it out on their own blogs, and I am really excited to work with them.  The Blogcademy is coming to NYC in September, but I just couldn’t wait until then so I registered for the May event in Chicago. I haven’t been to Chicago in almost 10 years, and I love traveling in the spring, so I thought that The Blogcademy was a good excuse to go.  As an added bonus, I am staying with my old roller derby friend Sara Problem while I am in Chicago. She just so happens to be coaching a team on the Windy City Rollers Roller Derby League…if I play my cards right, I hope to check out a roller derby game while I am there.  I am going to have all of the fun!

Today I realized that Blogcademy was a little over a week away and that I should start planning my outfits accordingly, because this girl is running out of time!  One of the great things about Blogcademy is that all of the participants are encouraged to wear cute ears on their head of some sort.  I am totally all about anything in headband form with something cute attached to it, that I can put on my head.

On my way to the post office the other day, I was taking inventory of all of the fun headbands that I own…bunny ears, a rainbow bright headband, a unicorn horn, a tiny Mexican hat, a tiny Mardi Gras hat, but I didn’t have anything that was glittery.  As I was debating if I should go home and order something glittery off of Etsy, I passed a Michael’s Craft store…you all know that I can’t help but go into this store. Now I had a legit reason and I also had a 20% off coupon burning a whole in my pocket. Surprisingly, I was only in there for 15 minutes and I managed to walk out with 2 sticky pieces of glittery foam paper, some yarn for a future scarf, and a bunch of glow sticks (I am planning a little glow stick fun in my next yoga classes that I teach).  I walked out of there with all of these goodies for under $15 dollars…Winning!  On my way home I passed a dollar store, where I was able to score 3 headbands for a dollar…the glittery headband planets were definitely aligning.  I raced home with my crafty treasures and this is what I came up with.

 Directions

1. Draw out and cut an oval ear shape out of your white paper.

2. Trace two ear shapes on the back of your sticky foam with your ear template.

3. Cut out the ears.

4. Fold the ears in half to make sure that you cut the ears out evenly.

5. Before you remove the back from the ears, play around with the ear placement on your headband until you get it to your liking.

6. Peel the back off one of your ears and place the headband into the crease that you created when you previously folded your ear.

7. Fold the ear over the headband and stick the sticky sides together.  Do the same with the second ear.

Continue to make as many glittery kitty ear headbands, as your little heart desires.  I made a total of 2 to go with my outfits for the grand total of $4.25.  Amazing!

The possibilities are really endless; so don’t think that you just have to limit yourself to sparkly kitty ears.  I can’t wait to see what you create!

Derika managed to catch the plague at work last week and with all the travel and long hours, this cold has been holding on for dear life. I have been keeping my distance the best I can in our 582 square foot apartment.  I have also been downing a ton of fire cider and drinking tons of water in hopes that I don’t get the plague as well.  So far it has been working like a dream! Yay, for Fire Cider and homemade magical soup packed with a ton of vitamins!

To help Derika get well, I decided to whip up some of my trusty Veggie packed “Chicken” Soup,  because it has magical healing powers and it is so good for you! I figured that if my veggie packed ‘chicken’ soup, doesn’t do the trick then it is time for her to give in and finally go see the doctor. The veggie to broth ratio is crazy, and this time I added a little jalapeno and ginger for an added health boost.  Here is what you will need.

Ingredients

  • 1 Tsp. Olive Oil or Ghee
  • 1 Sweet Onion, diced
  • 8 Cloves garlic, minced
  • 6 Carrots, peeled and diced
  • 6 Celery Stalks, diced
  • 1/2 Jalapeno, diced (remove the seeds if you want a little less heat)
  • 1 Inch Fresh Ginger, peeled and minced
  • 1.5 Cups Quinoa, cooked
  • 1/4 Cup Parsley, diced
  • 7 Cups Veggie Stock (or enough veggie stock to cover the vegetables  about 2 inches)
  • 3 TBS. Fresh Dill, minced or 2 Tsp. Dried Dill
  • 1 Tsp. Dried Basil
  • 1 Tsp. Tumeric
  • 1 Tsp. Onion Powder
  • 1 Tsp. Granulated Garlic
  • 1 TBS Vegetarian ‘Chicken’ Base, I use Vogue Vegetarian Soup Base (optional)
  • 2 Bay Leaves
  • Salt, to taste
  • Pepper, to taste
  • Crispy Tofu, or protein of choice
  • 1 Cup Curly Kale, chopped (optional)

Directions

1.  In a large pot, heat 1 Tsp. ghee or olive oil on medium heat. Add onion and sauté for 5 minutes.  Add the celery, carrots, garlic, jalapeno, and ginger and sauté for about 5 minutes or until veggies start to lose their crunch. Be careful not to burn the garlic.

2.  Add stock, parsley, dill, basil, onion powder, granulated garlic, vegetarian ‘chicken’ base and bay leaves. Reduce heat to low, cover and simmer about 30 minutes to develop flavor, stirring occasionally.

3.  While your soup is simmering cook your quinoa and set aside.  I like to add my quinoa to my bowl of soup rather than adding it to the whole pot of soup.

4.  Carefully taste the broth and season with salt and pepper. (Different brands of broth vary, so it is important to taste for seasoning as you go. Also if you use a homemade broth, you will have to add a lot more salt than you might expect too.) 

5.  Remove the soup from the heat.

6.  Add cooked quinoa to your soup bowl, maybe some chopped kale if you are feeling sassy and top all that goodness with your soup.

Wait for it…. Wait for it…. You are healed!  Hooray, for this magical soup with healing powers!

I hope that everyone had a great holiday! We didn’t get into too much, but the weather was beautiful so we headed on over to Central Park and pretended that we were laying on the beach in the sunshine. It was not the beach, but the little extra vitamin D and the bunny ears did us wonders. 😉

Minus the weird snow hiccup we had last week, spring has officially sprung in NYC and I cannot stop taking photos of all of the blooming trees! I mean just look at these beauties! My phone is loaded with oodles of these trees, but I just can’t help myself.

Another highlight of my week was getting our apartment windows cleaned. I don’t think they were cleaned before we moved in, and the new-found sunshine made me realize that they were starting to look like those frosted windows that you have in your bathroom for privacy. So last week I inquired with the front desk to see when the windows were cleaned in our building…they snickered and let me know that it was our responsibility to clean our windows…Lovely! I emailed our landlord about the windows and never got a response…Awesome! At that moment I knew that I was on my own for this one.

Derika came home that evening and I asked her if she would mind holding my legs down while I scooted onto the outside ledge of our second story windows. I figured that with her securing my legs, I would be able to get the windows cleaned in no time. She looked at me like I had hit my head on something, and said that I was being ridiculous. She told me to ask the Google, because she was sure that I could find someone in NYC to clean our frosted windows. My Cirque Du Soleil window cleaning dreams were crushed even before I got to pick out my special window-cleaning outfit…

The next day I was doing the laundry with my cute little Asian ladies, who are still so excited about their new-found lint trap removing skills. While I was waiting for my last two minutes on my dryer to run out, I saw a sign on the classified board for Gilbert The Window Cleaner…Perfect! I sent Gilbert an email, and we settled on a date, time and a price in under 30 minutes…Winning! Gilbert arrived on Monday morning and was sprinting around my apartment cleaning my frosted windows within 5 minutes of his arrival. Over the course of the next 3 hours, Gilbert and I chatted about every show that was ever on television, his favorite places to eat chicken, and how he now weighs 190, but he use to have a body of a gymnast and weighed 110. While we conversed, he used every tool we owned and all my WD-40 to gently coax the stuck windows out of their winter hibernation.

The windows in the living room were a breeze and were sparkling in a jiffy. The fun started when he got to the bedroom. All I could hear was a lot of grunting and swearing, and I was afraid to see what was going on so I just let him be. I was trying to block out the sounds coming from our bedroom, when I heard “Danielle, help me please!!” I had no choice but to go see what was up. To my shock Gilbert was demonstrating his gymnast skills (I have to admit, that I did see a glimmer of his previous gymnast body), as he hovered on the outside ledge of our bedroom window. The grunting was him trying to unhinge the windows, but they weren’t having it. So his solution was to climb outside, while I stood inside and handed him his cleaning supplies.  I was freaking out, but he was as cool as a cucumber! As he balanced on the ledge he proceeded to ask me how I chose the art for our apartment, and was wondering if I had ever seen the television show “GIRLS.”  He was shocked when I told him that I hadn’t seen it, and he told me that he didn’t care what people thought of him for liking it. He said that if a 50-year-old man loved the show, then you know it is good. He suggested that I cancel my plans that evening, and watch my first episode that night, because it was the best show he had ever seen!

What the heck was going on, and how do I always end up in these weird situations when Derika is nowhere to be found? I was trying to focus on what he was saying through the glass, when out of nowhere he was asking me for my toilet plunger!? I wasn’t sure if I had heard him right, but I went and got my plunger anyway. He proceeded to take it apart while balancing on the ledge of our building. He said that he needed the stick of the plunger to reach the top of the windows. I was speechless, as he proceed to put the finishing touches on our windows with the help of our toilet plunger. Before I knew what was going on, he was asking me to help him back into the building, and I all of a sudden I had a toilet plunger in my hand. To my relief Gilbert The Window Cleaner, did not fall to is death, and he was back sprinting around my apartment chattering about the show “GIRLS,” while collecting his cleaning supplies. Five minutes after he came off of the outside ledge, I was paying him and he was on his way!

There is no judgement on my end about Gilbert’s love for the show “GIRLS,” because that man can sure clean a window. Our apartment feels like a new place; I can barely see the glass on our windows they are so clean. If you live in NYC and have a fondness for clean windows and the TV show “GIRLS,” then Gilbert is your man. Message me if you want his contact info. 😉

I am quickly learning that spring is my favorite time of year in NYC. It holds so much happiness, I mean come on…how can you look at all of the amazing blooming trees through your newly cleaned windows and not be happy? I haven’t lived in a place that has actual seasons in a while, and I have to admit that I kind of like it. On the other hand, I know that I don’t do well in the humid heat, so I am trying to savor every minute of this amazing weather. I am going to try my best to not turn into a beast when the city turns into a sweaty smelly mess this summer, but I am not making any promises. Maybe I should just head to San Diego for the summer to prevent my sweaty beast personality from emerging. 😉

With the arrival of spring, I have been craving fresh salads with a little sass. I think that I will forever be stuck in my kale kick, so I apologize for another kale salad recipe. You could substitute the kale for your lettuce of choice and I am sure it would still taste amazing. The sass in this recipe comes for the Sriracha, that I added to my peanut dressing. This dressing is great tossed into a salad.  I also got creative day two, and heated the dressing up a smidge and drizzled it over my tofu quinoa salad…it was so good! The possibilities with this salad dressing are endless, and I can’t wait to hear the creative ways that you use it.

Salad Ingredients

  • 2 C Curly Kale, thinly sliced
  • 1 C Carrot Strings, using a julienne peeler
  • 1 C Cucumber, chopped
  • 1 C Red Pepper, chopped
  • 1 C Cilantro, diced
  • 2 Green Onions, chopped
  • 1 C Cooked Quinoa
  • Tofu or Protein of Choice

Dressing Ingredients

  • 3 TBS Creamy Peanut Butter or Almond Butter
  • 1½ Tsp. Sriracha
  • 3 TBS Almond Milk
  • ½ Tsp. Sesame Oil
  • ½ Tsp. Extra Virgin Olive Oil
  • ½ Tsp. Apple Cider Vinegar
  • ½ TBS Maple Syrup
  • ½ Tsp. Freshly Grated Ginger
  • Pinch of Salt

Directions

1. Toss the kale, carrots, cucumber, red pepper, cilantro, and green onions, together in a large bowl.

2. Whisk together the dressing ingredients in a small bowl. Add more milk if necessary to get the desired consistency.

Dressing

3. Pour dressing on top of the salad and toss until fully coated.

To serve, put a layer of quinoa on your plate, top the quinoa with salad and put your protein of choice on top of the salad and serve with love.

April is National Stress Awareness month, sooooo Happy Stress Awareness month to you! Who knew!? You can basically Google any day or month of the year, and I am confident that it will be a national day or month for something.  Since I have found out that it is National Stress Awareness month, it has gotten me to thinking about the things that I do to rest, relax and rejuvenate! When I lived is San Diego, I found that it was easy to unplug at least once a week and go twinkle my toes in the sand with a good book. Now that I am in living in New York City, I feel it is really easy to get swept away in the hustle and bustle of my new environment. This made me realize how important it is to set some time aside at least once a week, to do something that makes me happy.  Below are a few things that make me smile and help me to relieve stress and find balance.  Hopefully you can find one or two that will work for you!

Workin’ On My Fitness!

Skating-Exercise

I wish I liked running; it is free, easy to do almost anywhere and at any time of the day. Unfortunately, no matter how many times I have tried it I just don’t enjoy it. The great thing about exercise is that it comes in so many shapes and sizes. Anything that gets your body moving and those endorphins flowing is considered exercise. At this moment in my life, I am the most relaxed when I am roller skating through Central Park in the spring, with my trusty travel companion Julia the Mystical Traveling Unicorn.  If I am not skating, you will find me practicing/teaching yoga at Unity Yoga, one of my favorite new yoga studios in Harlem.  If I can’t make it to the park to skate or to the studio to do yoga, I try walking to do my errands when it is appropriate. Even if you hate all things exercise, try walking the next time you go out instead of driving or taking the subway. It gives you an opportunity to slow down a bit, and it will also help you discover the cool nooks and crannies of your town.

Just Dance!

I like to dance, but my wife Derika loves, loves, loves to dance! Sometimes she doesn’t even need music, when this happens I can’t help but giggle. Dancing is a great way to get some exercise, work on your flexibility and reduce stress. If busting a move is not your thing, try listening to some good tunes. When I use to drive (living in NYC has really put a damper on this girls driving time), nothing made me happier than listening to some great music with the car windows rolled down after a stressful day at work.

Hang Out With Your Besties!

We have moved a lot and I am a pretty lucky girl to have besties sprinkled like glitter all over the country.  There is nothing more relaxing to me, than going out for a tasty beverage and some good conversation with one of my gal pals.  If your bestie is far away and you need a fix, try setting up a phone or facetime date with them. I can only stalk my friends on Facebook for so long, before I need to have an actual conversation.

Get Crafty!

Making things for people makes me so so happy.  You don’t have to be a super crafty person to make prizes for your loved ones.  Grab some glue, glitter, and some fancy paper; with a little wine and imagination, you will have a simple homemade card in no time! I always find that giving a homemade card over a store-bought card, seems to go a long way with the recipient.

I also just learned how to crochet and I have been on a mission to make a scarf or 3 for everyone that I know.  I love my new hobby, because I can pretty much do it anywhere. Crocheting is a secret traveling craft that I can whip out and work on no matter where I am. I have started to crochet on the subway to pass the time, and to help me de-stress from all of the subway chaos happening around me. I am shocked by how many people stop to talk to me about what I am making.  I thought that by crocheting on the subway, people would be less likely to interact with me, but it has had the complete opposite effect!?

Eat Better and Drink Some Tea.

You don’t have to completely cut out french fries, pizza and burritos…just enjoy them every once in a while rather than every day. Making a healthy meal every now and then can do wonders for your stress level.  Not only can cooking be extremely relaxing, eating lots of vegetables, lean proteins and getting in your omega-3 fatty acids, have been shown to reduce the symptoms of stress.

I can’t help but splurge on pizza every now and again, because I love it so so much!! If you splurge on pizza for a meal, try sipping on tea rather than coffee throughout the day.  Green tea has less than half the caffeine of coffee and contains healthy antioxidants, and amino acids that have a calming and soothing effect on the nervous system. There is something about having a warm cup of tea in my fancy unicorn mug that really gets my day going. How can you look at this mug and not be happy!?

Derika obviously took this photo without my permission, but it exists so lets embrace it. 🙂 Lack of sleep is a key cause of stress. I find it hard to just go to bed without checking my email, facebook, twitter, instagram, pinterest…etc.  Before I know it, 2am has arrived and I feel like poo the next day. If I am not tired when I go to bed, I try reading and once my eyes start to burn, I focus on my breathing.  This has been helping and I am now only staying up until 12am. Not the best, but it is getting better.

Call up some of your ladies and treat yourselves to some manicures, pedicures and facials! It is so relaxing to sip on some bubbly and let someone else do all of the pampering, especially if you have some friends that you can go with.  If you are trying to pinch your pennies, make some mimosas at home, and have a mini spa day with your friends in the comforts of your own home.  When I host a spa day, I provide light snacks and bubbly, and ask my ladies to bring over some of their favorite beauty supplies to share.  I work for Rodan and Fields skin care, so I always have a bunch of skin care products that I am excited to chat about. These parties are a great way to relax with my ladies, and it gives us a chance to catch up and chat about our favorite beauty tips and tricks.

Travel!

This one is my favorite, because I love to travel! It is nice to disconnect every once and awhile, and reconnect with yourself and what matters.  Traveling can come in so many shapes and sizes.  You don’t have to get a stamp in your passport to travel.  Have a staycation in your city or find some new areas around you to travel and explore. We lived near the beach in San Diego, and I was super spoiled by the proximity of the beach to my house.  However, it was sometimes hard to unplug when we were just hanging at the beach by our house.  Derika and I did a search of the areas around where we lived, and we found that there were tons of places to visit affordably that would still feel like a vacation.  One of our favorite places to have a quick vacation when we lived in San Diego was Las Vegas.  I know, it sounds so weird that we would go to a bustling city to relax, but it worked and we loved it.

We were able to do this affordably, because I love to play the unicorn penny slots when I am in Vegas. This small passion has somehow managed to get me Pearl status at the M life hotels.  Derika is shocked by my Pearl status, because she plays black jack, gambles way more than I do, and is still at a status below me.  Anyway, my mad unicorn penny slot skills gets us free hotel stays…which makes us both happy. 🙂

This is what a relaxing Vegas trip looks like to us…

On a good day you can drive from San Diego to Vegas in about 4-5 hours (4 hours if Derika is driving)…Winning!  We check into our free hotel room at Mandalay Bay and go directly to the wave pool…which is amazing!  We then spend our days reading, swimming and sipping on tasty beverages.  One evening we might end a day at the pool at Scarpetta in the Cosmopolitan Hotel, our favorite restaurant in Vegas.  If we are feeling sassy we might follow the other day at the pool with some black jack and unicorn penny slots, or a Cirque Du Soleil show (our favorite is ‘O’ at the Bellagio).  We would end up coming home tan, well rested and happy. The travel possibilities are endless! Find your next simple getaway, by simply searching your local area; you might be surprised at the magic-ness that awaits you!

Enchilada Casserole

It is Taco Tuesday again, how are you going to celebrate? Derika is traveling so I am treating myself to margarita happy hour with a friend. Last week I made a killer enchilada sauce, no more canned enchilada sauce for this girl. With that sauce I made this epic veggie enchilada casserole.  This dish would be great for a Taco Tuesday or a Cinco de Mayo party. I can’t believe that Cinco de Mayo is right around the corner! Get out your beads, your sombreros and your tequila…. ¡Arriba! You could make this casserole a day or two before your fiesta, and throw it in the oven as your guests are arriving.  This dish will make you the belle of your Cinco de Drinko party, and it will leave you with more time to focus on your mad margarita skills. Winning!

Ingredients

  • 1 Tsp. Ghee/Olive Oil
  • 1 Red Onion, diced
  • 1 Red Bell Peppers, diced
  • 1 Small Green Bell Peppers, diced
  • 1 Zucchini, sliced into rounds
  • 1 Head Broccoli, chopped
  • 6 Cloves Garlic
  • 1 Jalapeno, diced and seeded
  • 2 Tsp. Chili Powder
  • 2 Tsp. Cumin
  • Salt, to taste
  • 2 Cups Shredded Cheese/Sassy Sauce to make it vegan
  • Corn Tortillas
  • Refried Beans
  • 2 Cups Red Enchilada Sauce
  • Pico de Gallo, Cilantro, Avocado, and Greek Yogurt for topping

Directions

1. Heat the ghee in a large nonstick skillet. Add the onion, peppers, broccoli, zucchini and sprinkle with chili powder and cumin.  Sauté the veggies for 5 minutes, remove and set aside.
2. Sprinkle the roasted veggies with a little bit of salt and toss to coat.

saute veggies3. Grease an 8×8 inch baking pan and preheat the oven to 400 degrees.
4. Cut the tortillas into thin strips.
5. Put the refried beans in a bowl and mix with a little bit of water to make them easier to spread.
6. Spread a little bit of sauce on the bottom of the pan. Layer in order: half of the tortilla strips, ALL the beans, half of the veggies, half of the sauce, half of the cheese. Cover with the other half of the tortilla strips, veggies, sauce, and cheese.

*Note – If you want to eliminate the cheese, spread a thin layer of sassy sauce onto one side of the tortillas before you layer them into the casserole. I did this and still added cheese and the results were epic!

casserole assembly 6. Cover with foil and bake for 15-20 minutes, until the sauce is bubbling and the cheese is melted.

Serve your casserole with pico de gallo, hot sauce, guacamole, fresh cilantro, greek yogurt, or anything else that your little heart desires.

Enchilada Sauce

I wish that everyday were taco Tuesday, so then I could eat all things Mexican all of the days! I think that I have mentioned in a blog post or ten that I love Mexican food and I really love taco Tuesday. Not like I need a reason, but it gives me an extra reason to whip up some Mexican food and eat the heck out of some chips and salsa.

The other day, I was doing the washer and dryer shuffle in the laundry room with the cute Asian ladies that live in my building. When I happily realized that it was Tuesday, which means that I needed to make something Mexican…heck yes!   My taco happy dance was momentarily halted when I turned around from the dryer, and one of the cute Asian ladies was in my face pointing at my hand asking me “What I do?”  I looked down at the limp lint ball that was dangling from my fingers and I responded, “I was doing my laundry.”  She then pointed at the lint in my hand and asked me again “What I do?”  After a few awkward moments of silence, I realized that she wanted to know how I produced the teeny lint animal from my dryer.  I turned around and showed her how to remove the lint trap from the dryer, and informed her that this is where the lint animals spend most of their quality time.  Before I could return my lint trap to my dryer, she was already bolting through the laundry room. Socks and underwear where left in her wake by the time she reached her two dryers that were currently in use.  She flung open both of her dryers mid-cycle and whipped out the lint traps. To her horror she found a whole zoo of baby lint animals hanging on for dear life.  She looked at me in shock and uttered the words “Ohhhhhh Nooo! So sooo soooooo Durtee!” She immediately ran over to the trash can with her poor lint laden lint traps (try to say that 3 times fast), and proceeded to beat the crap out of the garbage can with the traps.  I quickly showed her how to rub her hand along the traps to help set the teeny lint animals free. Unfortunately I did not get there before the lint traps were bent in odd shapes from the violent beating on the trash can.  I handed her back her lint free bent lint traps, and she proceeded to stare at me wide-eyed, as if I had just produced a skittle eating unicorn out of my laundry basket.  I had no idea that when I woke up that Tuesday, that I would get to be a cute little Asian woman’s lint superhero for a good 5 minutes. Those 5 minutes quickIy passed ,and I went back to my own laundry and my taco Tuesday thoughts…

Sorry for the tangent, but I am quickly discovering that rarely a day goes by in this city without an amazing encounter similar to this. I realized that I need to start writing this stuff down!  So from time to time, I am probably going to throw a NYC story in with a post for your enjoyment, because some of the things that happen to me are just too random not to share. After the lint superhero experience in the laundry room, I settled on making an enchilada sauce. I layered this sauce into an epic enchilada casserole (casserole recipe coming soon). For now, just enjoy the magicness of this sauce, and go make friends with the mystical lint animals living in a dryer near you. 🙂

Ingredients

  • 1 TBS Olive Oil
  • 1 Small Onion, diced
  • 2 Cloves Garlic, minced
  • 1- 2 TBS Chili Powder (depending on your desired spice level)
  • 1 TBS Ground Cumin
  • 1 (28 Ounce) Can Tomato Sauce/Puree
  • 1 Cup Veggie Stock or Water
  • 1Tsp Kosher Salt

Directions

  1. Heat oil in medium saucepan over medium-high heat. Add onions and sauté for a few minutes, until they start to brown on the edges, about 5 minutes.
  2. Add the garlic, chili powder, and cumin. Cook for an additional minute to toast the spices.
  3. Add in the tomato sauce, as well as the veggie broth. Stir to combine and bring to a boil.
  4. Reduce heat to low and simmer for 10 minutes.
  5. Remove from heat, let cool for a bit and then blend with a hand mixer or in a blender to eliminate all of the chunks.
  6. Season sauce with salt and black pepper to taste.
  7. Reheat the sauce to a simmer for 15 minutes, to incorporate everything.

This enchilada sauce will keep in the refrigerator for up to a week, or in the freezer for up to 3 months.

Keep me posted on how you end up using this amazingly easy enchilada sauce…you will never buy canned sauce again!
